Mixed Greens with Mandarins, Avocado and Asian Dressing
This recipe was adapted from Sunset Magazine and is one of my favorites because it features two of our most prized Gold Oak Ranch products: certified organic mandarin oranges and almonds.
1/2 cup toasted slivered almonds
1/3 cup rice vinegar
2 tablespoons Asian sesame oil
1 1/2 tablespoons sugar
1 tablespoon soy sauce
1/2 teaspoon ground ginger
1/2 teaspoon dry mustard
4 or 5 organic mandarin oranges, peeled and separated into segments
1 avocado, peeled and thinly sliced
1 bag mixed salad greens
Directions: In a small bowl, mix vinegar, oil, sugar, soy sauce, ginger, and mustard. Pull off and discard any loose membrane on mandarin oranges. Put lettuce, mandarins, toasted almonds, and avocado slices in a large bowl. Add dressing, being careful not to overdress. Mix gently, adding salt and pepper to taste. Enjoy!
